Built for the Way Vegetables Actually Cut

Four design choices that fix the accordion scallions, cracked carrots and sticky potato slices a curved chef's knife leaves behind.

15° Razor V-Edge

Hand-honed to 15° per side, sharper than the 20–22° edges on most Western knives. It cuts tomato skin on contact instead of pressing down on it.

Dual-Release Surface

Hammered dimples up top and oval Granton scallops above the edge let air in behind wet slices, so cucumber and potato coins fall off the blade.

Dead-Flat Nakiri Profile

The 170mm edge is straight from heel to tip. One push cut meets the board along its whole length, so no rings stay connected by skin.

Full-Tang Rosewood Handle

Steel runs the full length of the handle, held with three flush rivets. No gaps where food can collect, and a secure grip with wet hands.

How the Kuro-7 Cuts Differently

Full Board Contact

Full Board Contact

A curved chef's knife rocks over the middle of a scallion bunch and leaves the ends joined. The Kuro-7's flat 170mm edge reaches the board along its full length in a single push, so every ring separates.

Wet Slices Let Go

Wet Slices Let Go

Flat steel and wet cucumber create suction. The hammered dimples and Granton scallops break that seal with small air pockets, so slices drop beside the blade instead of riding up it.

One-Sweep Scoop

One-Sweep Scoop

The 50mm-tall blade face works like a bench scraper. Turn it flat, slide it under a pile of diced mirepoix, and move the whole thing to the pot in one pass.

Description

The Blade: 170mm (6.7 in) of 5Cr15MoV high-carbon stainless steel, heat-treated to 56–58 HRC. The 2.2mm spine tapers to a symmetrical 15° per-side edge. The upper face is hammered (tsuchime), the middle carries an etched Damascus pattern, and a row of oval Granton scallops sits above the straight edge. The front corner is slightly rounded so it won't dig into your board.

The Handle: Natural rosewood scales, contoured for a pinch grip, are fixed to a full-length steel tang with three flush rivets and a polished metal bolster. The knife balances right where your thumb and forefinger meet the heel.

What It's For: Vegetables, herbs, fruit and boneless proteins. Push cuts, fine slicing, julienne and dicing. It isn't for bones, frozen food, coconuts or any other heavy chopping.

Why Choose the Cosari Kuro-7?

Cosari Kuro-7 Detail

Hard Enough, Not Brittle

At 56–58 HRC, the steel holds a keen edge for weeks and won't chip on a stray squash seed. A few strokes on a ceramic rod bring it back.

212g, Balanced at the Pinch

There's enough forward weight to carry the blade through dense carrots, with the balance point at the bolster so your wrist isn't doing the work.

Backed for Two Years

The edge, tang and handle are covered by a 2-year integrity warranty, on top of the 30-day money-back guarantee.

Passed the no-hands Roma tomato test right out of the box

I had to try the unsupported tomato slice the minute I washed it off, and sure enough it shaved paper-thin rounds off an overripe Roma without crushing a drop of juice onto my bamboo board. I also didn't realize how much I hated my curved 8-inch chef's knife until using this flat Nakiri—no more accordion scallions or cilantro stems still connected at the bottom.

Gorgeous unboxing and feels way more expensive than 50% off

Showed up fast in a sturdy brown mailer with an inner dark gift box, poly sleeve, and tip guard. The rosewood handle is warm, contoured, and completely flush around the three rivets so there is zero gap for food gunk to hide. Even before putting it on our magnetic wall strip, my husband picked it up and thought I spent $180 at a specialty cutlery shop.

Cucumbers and potatoes actually fall off the blade

My biggest pet peeve with broad knives is wet zucchini and potato coins suctioning to the flat steel and rolling onto the floor. Between the hammered top finish and the hollow Granton dimples right above the edge, slices actually peel away and stack neatly on the board as you go.

Retired our sketchy mandoline slicer for good

I make roasted veggie bowls four nights a week and used to dread hauling out the mandoline and worrying about my fingertips. With the Kuro-7's 212g front-balanced weight, gravity does most of the work—I get 1mm translucent radish and zucchini coins in thirty seconds flat without my wrist aching.

Big knuckle clearance + doubles as a bench scraper

I wear XL gloves and most 6- or 7-inch knives make my knuckles rap against the cutting board on every chop. The 2-inch tall rectangular blade gives me tons of clearance, and once an onion is finely diced I just flip the spine angle slightly and scoop the whole pile straight into the skillet.

Zero wedging on cold carrots and sweet potatoes

Dense root vegetables used to make a loud cracking sound under my heavy German chef's knife because the thick spine wedged them apart instead of cutting. This thin 2.2mm blade drops cleanly from top to bottom through cold carrots and butternut squash halves with barely any downward push.

Sharp like my $165 Japanese knife without the fear of chipping

I own a pricey VG-10 Japanese blade that stays in a drawer half the time because I'm terrified someone in my house will twist it and chip the edge. The Kuro-7 is a workhorse—four quick passes on a honing rod after three weeks of heavy meal prep brought the factory bite right back with zero micro-chips.

My new daily driver (wish they made a matching paring knife)

Balanced right at the pinch-grip bolster where the rosewood meets the hammered heel, and it never feels slick when my hands are damp from rinsing greens. Only knocking half a point in my head because Cosari doesn't sell a matching 3.5-inch paring knife yet—otherwise it's a straight 10/10.

Kind to my end-grain walnut board

Because the front nose is gently rounded instead of having an aggressive pointy tip, I never accidentally gouge my walnut end-grain board during fast push-chops through garlic and parsley. Super intuitive motion even if you've only ever rock-chopped before.

Frequently Asked Questions

Is the Kuro-7 a bone cleaver or a vegetable knife?

It's a vegetable knife. The rectangular shape looks like a cleaver, but the spine is only 2.2mm thick. Use it for vegetables, herbs, fruit and boneless proteins. Never use it on bones or frozen food.

Will it rust if I cut tomatoes or lemons?

No. The 5Cr15MoV steel contains about 15% chromium, so it resists rust during normal prep. Rinse it after cutting acidic foods and towel it dry, as you would with any good knife.

Is the handle full tang?

Yes. The steel runs the full length of the handle and is held between natural rosewood scales with three flush rivets. There is no glued plastic tang.

Does it work for left-handed cooks?

Yes. The edge is a symmetrical 50/50 double bevel at 15° per side, so it cuts the same in either hand.

Can I sharpen it with what I already have?

Yes. At 56–58 HRC it hones quickly on a ceramic rod and sharpens easily on a 1000-grit whetstone. A pull-through sharpener works too, but a rod or stone keeps the edge cleaner.

It says 7-inch. What's the actual blade length?

The cutting edge measures 170mm (6.7 inches), and the knife is 295mm (11.6 inches) overall. It's sold in the 7-inch class, the same way most knife makers round their sizes.
