Stopped turning my 36-hour sourdough boules into doorstops
I used to nurse a 78% hydration boule for two days only to butcher it at breakfast because my 8-inch block knife was too short and bowed sideways on the bottom crust. First morning using the Cosari 10-inch forged blade and I cut four dead-even slices for toast without crushing the crumb at all. The weight of the bolster practically lets gravity do the work, and there was barely any crust shrapnel on my walnut board.
